Hello world, I am still here. Man, it’s been a crazy four months at our house. Between working from home or in our case (small apartment) and my husband and I helping our child finish the school year it was a challenging time of change and uncertainty, but we are still hanging on if only barely. In April I hopped on the diet wagon and made a big change by eating better and exercising daily but by early June I hopped off and then I hopped back on and now I’m off. It’s been about 3 times now but hey who’s counting. Between my time hopping on and off the diet wagon, I do believe the gates of hell opened up in Mississippi. The last two weeks have been HOT and lately, for dinner, I have been cooking light meals like chicken and veggies and salads but two weeks ago I started craving comfort food. Maybe it was my body telling me I needed some carbs or maybe it was the stress of the rise of virus cases that put me in the mood that only food could cure. I began searching and found this yummy creamy vegetable casserole that put my worries at ease and cured my soul. My family raved about this dish and it was also kid-approved which is a win in my book. Below you will find the recipe to this quick and easy comfort dish and feel free to substitute for fat-free or low sodium options on some of the ingredients. Until we meet again, wear your mask, be KIND, and eat some carbs
