I feel like I should kiss the person who invented the crock pot. This little thing has saved me so many times because time is precious and sometimes I don't have an hour or even thirty minutes to spare to whip something up for my bunch. I usually make the Mississippi Pot Roast which is delicious but I recently was wanting something different and honestly I'm always looking for something to put on a taco . :) This Mexican Roast is simple and is delicious on a taco or a bed of Spanish rice. Enjoy!

INGREDIENTS

  • 2lbs Chuck Roast

  • 2 cans of Rotel (drained)

  • 1 packet of Taco Seasoning

  • salt

  • pepper

  • 1/2 cup of Salsa Verde

DIRECTIONS

  • In a 6 quart crock pot add chuck roast and season with salt, pepper, and taco seasoning.

  • Add two can rotel (drained) and salsa verde

  • Cook on low for 8 hours

  • Shred and add to a bed of Spanish rice or a warm flour tortilla
