Kickin' Captain Rodney's Chicken on Croissants

I LOVE Captain Rodney's dip. It's one of those dips I could eat all day and still want more. A while back I decided to give this popular dip a makeover and make it into a delicious meal and that's exactly what I did I made the dip like normal and topped it over chicken breast and served with veggies and more recently I turned this dip into a spicy sandwich chicken spread. Get ready for some flavor overload.

INGREDIENTS

  • 1/2 cup of mayonnaise

  • 1 8 oz pack of cream cheese

  • 2 cups grated cheddar cheese

  • 2 green onions (chopped)

  • 1 4 oz can diced jalapeno peppers

  • 5-6 Ritz crackers (crushed)

  • 7-8 slices of bacon (crumbled)

  • 2 cups of cooked chicken ( I buy a rotisserie from my local grocery)

  • 1/2 cup of Captain Rodney's Glaze

  • 1 box (4 count) of butter croissants

DIRECTIONS

  • In a bowl combine mayonnaise, cream cheese, cheddar cheese, onions, jalapeno's, and chicken in a greased pan

  • Top with crushed crackers and bake at 350 degrees for 20 minutes

  • Top with crumbled bacon and Captain Rodney's Pepper glaze

  • Serve on warm butter croissants

  • Enjoy!
